My partner cooks his curries hotter than my tastebuds prefer. How can I cool them down?

    In addition to the above answers...

    Butter or Ghee

    Potato flakes(at time of Cooking)

    or best, you can make the Raita(yogurt dish) while he makes the curries....

    Ingredients:

    Yogurt – 2 cups, well beaten

    English Cucumber – half ( aprox. 6” long)

    Tomato – ½ med., finely chopped

    Green Chili – to taste, finely chopped

    Cumin – ¼ tsp, roasted and coarsely ground

    Red Chili Powder – ¼ tsp

    Chat Masala – ½ tsp

    Salt – to taste

    Mint Powder – ¼ tsp, optional

    Cilantro – 5 springs, chopped

    Method:

    Grate cucumber with or without skin.

    Squeeze out the water from grated Cucumber.

    Add all the ingredients into the beaten yogurt and mix well.

    Serves 4-6.

    Tips:

    If English Cucumber is not available, use the regular one but make sure to de-seed and peel it.

    Serve with a rice dish or with any Indian meal.

    Have you tried talking to the cook? OK...cookie likes it hot and spicy, however it is much easier to add the spice after the food is on the plate than it is to "cool" it down. Try a soft approach ( we all know how touchy these cooks can get about their food) and explain that you just can't handle the flood of Jalapenos in your plate.

    U can ask ur partner to not add so much spice or u can just put some plain cold yougert in them. It'll give it a more netural flavor and make it taste richer.

    Adding a little salt lessens the spice. Or you can spread a little oil (peanut or mustard oil) on your serving before you eat.

    If it doesn't work just keep a little yoghurt for yourself on the side... it doesn't alter the taste, but goes easy on the spice.

    Add any of the following;

    Yogurt,

    Cream,

    Coconut milk

    Eat with naan bread to help absorb the capsicum oils off your taste buds.

    with a chutney such as mango, or with cucumber and yogurt, that's why these are served with curries.....to counter the heat.

    add a little water,slice some potato, and cook it again

    Put more rice with yours.
