When you purchase a 3-day park hopper pass for Disneyland, do they have to be used in 3 consecutive days?

No..They do not. You have 13 days from the date of first use to use all 3 days.
"Disneyland® Resort 3-Day Park Hopper® Ticket (all ages*)
Includes three days admission to Disneyland® Park and Disney's California Adventure® Park, including visits to both theme parks on the same day. Tickets expire 13 days after first use, and each day of use of a Park Hopper® Ticket constitutes one full day of use."
