    Here's mine:

    1 1/2 cups flour

    1 1/2 teaspoons baking powder

    1/2 teaspoon salt

    2 tablespoons sugar

    1 tablespoon oil

    1 cup milk

    1 egg

    1 teaspoon vanilla

Whisk all ingredients together and cook on hot griddle or skillet. Serve with your favorite toppings.

I make my own pancake batter since both my kids and I are lactose intolerant (and all the pancake mixes still have either powdered milk or powdered buttermilk). Then I make the pancakes for the week, lay them on a lined cookie sheet and freeze them. Then just pull them out and microwave them for a minute to warm up and I'm done. It's cheaper and easier...plus I can make them strawberry, banana, blueberry or whatever the kids feel like for the week. Right now I have zucchini and raisin pancakes in the freezer and they're nearly gone!

Use any pancake mix on a weekend day when you have a little extra time. Make your pancakes as usual. Then freeze them!

On a busy workday morning, you can just pop them into the toaster on low-medium...many toasters even have a frozen waffle or pastry setting.

    Yummy...fast weekday pancakes!

Shaw's brand pancake mix is the best! You just add water and in a few minutes you have hot fluffy pancakes.
