It basically allows you to get and do stuff apple could never let you such as themes, fonts, apps, emulator...ect and it does depend on your firmware.
It depends on your firmware, if you have the latest firmware (4.2.1) then I suggest you wait a while before you jailbreak because they are still working on it. If your iPod touch is lower than 3.2.1 firmware it should be simple and easy to do www.spiritjb.com
make sure you have iTunes 9.2 or less
download program
plug in iPod touch
open program
should say your iPod
jailbreak your screen will load a picture of space
after a couple minutes or less
