I give you 2 recipes:
Ingredients
4 tablespoons olive oil
1 onion, chopped
3 tomatoes, chopped
1 to 2 tablespoons tomato purée
salt and freshly ground black pepper to taste
Preparation method
1. In a large pan over medium heat, cook onion in olive oil until translucent. Stir in tomatoes, cook until juice begins to thicken. Stir in tomato purée, salt and pepper. Reduce heat and simmer 15 minutes more, until rich and thick.
Ingredients
5-6 tomatoes - diced
1 garlic clove
1 onion
1/2 cup water
1 bay leaf
1/2 tsp sugar
4-5 basil leaves
1 tbsp onions - chopped
1/2 tbsp chopped garlic
salt - to taste
oil - to saute
Method:
Take a pan and cook the tomatoes. Add the clove of garlic, onion and bay leaf to it.
Add water and then season with salt and sugar. Cover and let the tomatoes boil. Cool and then grind to a puree.
Now in a separate pan, heat oil and add chopped onions and chopped garlic.
Add the tomato puree. Cook till its reduces to half.
Add basil leaves and keep aside.

Tomatoes - doesn't get any simpler. Didn't like that one? OK, then - Lloyd Grossman Tomato & Basil sauce is good. If you want to get as complicated as the other suggestions (Ratz - 2/3 cup olive oil? Wow!) then:-
Can chopped tomatoes
2 or 3 plum tomatoes or a good hanful of cherry tomatoes
Basil
Oregano
Salt
Pepper
Onion
Garlic
Green Pepper
Red Pepper
1 Kenyan Chilli - seeds removed
Dash of demerara sugar
Balsamic vinegar
Squirt of tomato ketchup
tomato puree
red wine
That's basically mine and it's the dogs - but you did say SIMPLE!!

Any of the above are ok...but l would ditch the olive oil for rapeseed oil. For a start olive oil tastes rank, and secondly rapeseed oil is far healthier...recommended by my husbands dietician.
