Photographers asked their subjects to say "cheese" in order to get a semblance of a smile from them. More recently other words have come into favor.
Last year the photographers favorite word was "sex"
This weekend she asked the group to say "chocolate cake"
In any case, the professional photographer is trying to maximize the number of happy expressions on faces in a group photo.

Saying cheese sort of forces your mouth and lips into a smiile. It's just something to make you smile :)
