Why didn't God start over when Adam and Eve comitted the first Sin?

It didn't matter who God created, true love is never forced or created, but is proven by goods. Programing angelic and human entities to love or perform virtuous activity would violate the existence of true love. So God didn't have to start over because the way everything was made was made perfect. Sin is the seed of all sorrow. Sin is result of love failure. If Adam and Eve had truly loved God, then they would have obeyed God.

Because love is not created, good deeds are not created, and since they are not created. It's God's will that everyone learn how to be good.

Just like the sick "need medicine", we all "need to learn how to be good."

To think intelligent creatures could be designed so that they had no conflict over limited desirables is much more optimistic than I am.

As I see it, any intelligent creature given freedom will have conflicts with other members of it's species. Necessarily. By definition of what freedom is and what intelligence is.

If there is freedom (instead of weird limits/control, like being in a box of some sort).....then there will be 'sin' -- that attack on another of one's kind to get something.

Because it was His plan. Adam and Eve did not sin, they transgressed. They were not capable of sinning. Think about it. Can Satan really screw up God's plan? He is always in control no matter what some other being does. There is nothing that anyone can do that will surprise Him. He knows all. He knew that Adam and Eve would eventually eat the fruit. He could have selected someone else who would not eat the fruit. Also none of us would have been born. Adam and Eve didn't even realize they were naked until they ate the fruit. How could they have known how to make a baby?

Yes, that would have been nice.

we would have been dancing around

and just running and dancing

eating, making friends, eating.

cleaning the house, eating.

praying, fasting eating,

Have you ever watched a soap opera where two people wander around aimlessly, naked, in a garden?

(actually that might be entertaining for a while lol).

But no, God was clearly bored with the plot and so when things started becoming more intriguing due to sin, he just went with it.

God could have made Abel to be Jesus. Cain kills Jesus, sins are forgiven, and all humans ever since would be Christians.

But where's the fun in that? That would mean no drowning all of humanity, no nuking two cities from orbit, no murdering innocent Egyptian firstborns, no torturing of non-Christians in hell, booooooooring.

Because then he wouldn't have anyone to torture for eternity.
