It's the most expensive coffee in the world. To understand it, you need to understand how coffee is processed from the tree to the cup.
Coffee beans grow in "cherries" each of which contains several beans and a dense pulp. There are different methods used to separate the beans from the cherry - dry method, wet method and variations thereof.
With Civet coffee the cherry is removed when "Civet Cats" (not actually feline, closer to a mongoose) eat the cherries and their digestive systems break down the pulp, leaving the beans to be pooped out. No. I'm not making this up.
The civet poop is then collected and the beans washed out The beans are sold and roasted.
