It’s perfect with tea, and can be used in place of granulated sugar in recipes where a lemon flavor is acceptable, like cookies or salad dressing

Use it as you would any other honey, in your baking, cooking, or even on toast / bread.
I've never seen any 'lemon' honey, it sounds good!.
