Can eggs be cooked in cast iron skillets, or will they stick too badly?

From what I've read and been told, cast iron skillets are supposed to be the "best" kind of skillet to cook eggs in. Make sure you oil the pan generously and heat it up before putting the eggs in. I would also suggest starting with scrambled eggs, just until you get the knack of cooking with a cast iron skillet. I have enough trouble cooking fried eggs without breaking the yokes in a non-stick skillet! I can only imagine trying to fry eggs in a cast iron skillet without some general practice first.

Also, when you go to clean the skillet, don't use any soap, just hot water. I think you can soak the skillet first if necessary. But don't use any dish detergent and don't put it in the dishwasher. Both cleaning methods can ruin the cooking surface and case the skillet to rust. I've also read that you shouldn't cook other foods in a cast iron skillet that you intend to use for eggs - something about the flavors staying in the skillet and then contaminating the taste of the eggs.

A properly seasoned cast iron pan should be fine for eggs.

Heat the pan, add your butter wait until the butter foams a bit then gently add the eggs.

You shouldn't have problems with sticking.

Just remember with cast iron you have to adjust the temperature you are using. The cast iron retains the heat so once the pan is hot it will remain so for longer than a regular pan.

I personally think the best oil for eggs is the grease left over from bacon since it imparts a good flavor. Make sure to loosen any pieces of bacon crust before you fry the eggs. They can be mopped lightly with a paper towel to remove excess oil after cooking. Learn to flip eggs by practicing with a hot pad. Flip eggs over the sink to avoid grease spills. Loosen the eggs with a spatula before attempting to flip.

  • it will if your pan isn't proved. Heat it on high fill it with salt and let it heat until smoking. Pour out the salt, wipe out then wipe it out again with a little oil. Then cook as you usually would and it should be fine. you do this because as metal is heated its pores open, the salt absorbs this moisture and smooths the pans surface thus making it non-stick. i hope this helps. Note, doesnt work on ALL pans but is usualy sweet with cast-iron.

I use my cast iron skillet to cook eggs in and it's always worked out fine.

We grease it up with bacon grease, though - I would do this, unless you are vegetarian/kosher/don't like the taste of bacon, in which case find some substitute.

They can, but the pan needs to be very well seasoned (shiny and black). Seasoned cast iron is the origional nonstick pan!

they shouldn't stick if you oil the pan first and keep it at a medium heat

also heat the pan before putting the egg in

You can, but turn the heat down and spray your pan good with some nonstick spay.
