Why do brain eating zombies have perfectly good heads?

You would think that a zombie would rip a person's head apart to get to the brain, but when that person becomes a zombie why is the skull intact?

    the only way to kill a zombie is by destroying the brain. so anyone that has their brains eaten by zombies will not become one. It's those that are bitten or partially eaten that turn.

    To piggyback on that, zombies aren't particularly smart - just hungry. So they rip at the flesh of their victim, causing them to transfer the virus into their victim, but are either fought off or otherwise distracted and the victim becomes a zombie with their head (albeit not their arm/leg/other flesh) perfectly intact.
