Is there a way to remove the overly sweet smell associated with some fragrance oil?
How can I de-sweeten a fragrance oil so that it is less sweet smelling?

It's very much a 'trial and error' situation. Try mixing in a little of a more tart, astringent scent - lemon could work well, for instance - and see if it balances the sweetness in a pleasing way. Good luck!
