Vegan marshmallow experiment?
Sooo since i can't get vegan marshmallows here and i can't really afford to ship some over, i was wondering. Could i possible make vegan marshmallows with pectin as the gelling agent? I understand that i would need to use more and i would use an egg substitute that can be used to make meringues for the aeration but would it work? I have had many baking fails in this life and i just really would like advise from someone who has maybe tried with similar ingredients, note i can't get agar until monday.

p.s i haven't eaten marshmallows in nearly a year and they are my favorite :(

i don't know the answer to this but i just think it's rad your experimenting with vegan marshmallows i hope you are successful

Could you get mochi? That's a fluffy-chewy Japanese rice cake thing. It's yummy and marshmallow-esque.
