green tomatoes..............................................?

I have 2lbs of green/unripe tomatoes left... Any ideas what to do with them?

I've made some chutney but still have these left...

It would be a shame to waste them.

    Michael P took the words out of my mouth. Fried Green Tomatoes topped with Shrimp Remoulade is WONDERFUL!

    Here's a good remoulade recipe for you:

    Chef John Folse's Shrimp Remoulade

    · 1 1/2 cups heavy-duty mayonnaise

    · 1/2 cup Creole mustard

    · 1 tbsp Worcestershire sauce

    · 1 tsp hot pepper sauce (Chef Folse likes Louisiana Gold, but Tabasco will do)

    · 1/2 cup finely diced green onions

    · 1/4 cup finely diced celery

    · 2 tbsp minced garlic

    · 1/4 cup finely chopped parsley

    · 1/2 tbsp lemon juice

    · salt and cracked black pepper to taste

    · 3 dozen 21-25 count boiled shrimp, peeled and deveined

    In a mixing bowl, combine all of the above ingredients, whisking well to incorporate the seasonings. Once blended, cover and place in the refrigerator, preferably overnight. A minimum of four hours will be required for flavor to be developed. When ready, remove from refrigerator and adjust seasonings to taste. Place six shrimp on a leaf of romaine or other colored lettuce and spoon a generous serving of remoulade sauce on top of the shrimp. Do not sauce shrimp prior to service, as they will lose their firm texture. Serves 6.

    Note: Many would add 2 T. Ketchup to make a “red” remoulade. Very good either way.

    Also add 1 T. Horseradish.

    Btw, you can wrap green tomatoes in paper, such as newspaper, and then store in a cool, dark place and they will last a few more weeks. Just check them weekly for any that may have gone bad. Most won't.

    I'm with the majority, slice and fry those puppies. I like to add a knob of pimento cheese to a stack as they come out of the grease.

    best thing ever, dredge in corn meal and fry. Make a little remoulade sauce to go on them, or even jsut ranch dressing. You won't be sorry.

    Slice about 3/8" thick, dip in beaten egg, dredge in seasoned flour, dip again, dredge in breadcrumbs, and fry in butter or olive oil.

    Simple, cut into quarters and pop them in your stew/casserole etc.....

    I had some (raw) in a salad and very nice too with a little salt on top.

    Fried green tomatoes.

    You will not waste them as they will ripen if you can't think of ways to have them green.
